Holidays are just around the corner, than means parties, gatherings, family visits, etc are in the horizon. Fun and all, but you also know you have to get cooking! Well worry no more, surprise your guests with this super easy, healthy yet delicious recipe. I cannot tell you how much I love these little bites, I could seriously eat them none stop! They are also fairly quick to prepare so let’s get to it, shall we.
What you’ll need:
Zucchinis (As many as you think you’ll need)
Grated parmesan cheese
Shredded parmesan cheese
Salt and Pepper
Preheat oven to 450F. In a bowl mix the grated and the shredded parmesan cheese with the parsley and salt and pepper to you liking and set aside.
Slice the zucchini and set aside. Crack the eggs into a bowl and beat at least 3 eggs, then dip the zucchini slices into the eggs thoroughly.
Then proceed to coat the zucchini slices into parmesan mix, try to stick as much of the mix to the zucchini as possible (that’s the secret to this little taste of heaven)
Spray a baking sheet with cooking oil, and proceed to place to the zucchini on it. Leave some space in between them. Bake for approximately 25 -30 minutes or until the zucchini slices turn into a light golden color.
Serve with the ranch dressing of your preference and ENJOY!
